Pisnyi Borshch is a special meatless version of borscht from Ukraine.

INGREDIENTS

– sunflower oil  – garlic – onion – celery

Pour in the sunflower oil, then add garlic, onion, celery, and cabbage.

Cook for around 5 minutes or until onions have softened and cabbage has wilted.

Next, throw in the beet roots and leaves. Cook for another 5 minutes.

Now add the tomatoes and spices, and pour in your water or vegetable stock.
