Soak the dangmyeon noodles, shiitake mushrooms, and wood ear mushrooms in cold water for at least 4 hours or overnight.

Squeeze excess water from the mushrooms and slice into strips.

Take a wok or a skillet with high sides, and set on high heat. Pour in the oil.

Sauté onion, scallion, and carrots briefly no more than 30 seconds until aromatic.

Add the sweet potato noodles, mushrooms, and spinach.
