Add coconut oil and onions to a Dutch oven or stockpot on medium heat.

Add chili peppers, salt, and ginger. Sauté until the onions are softened.

Now add the carrot, potato, green beans, and salt.

Pour 2 cups of water over and cover with a lid.

Add curry leaves. Bring to a boil, then lower the heat and simmer until vegetables are softened to your liking.
