Vegan Jajangmyeon

This Vegan Jajangmyeon is made with a hearty mix of tofu and vegetables covered in a rich and savoury black bean sauce.

INGREDIENTS

– Fresh noodles  – Oil – Yellow onion – Fried tofu or firm tofu – Zucchini – Daikon radish – Dried shiitake mushrooms

Heat a wok or sauté pan on medium heat and add 1 tbsp of oil.

Sauté the diced onions, tofu, zucchini, radish, and shiitake mushrooms on medium heat until soft and aromatic.

While the vegetables and tofu are cooking, mix together sugar, black pepper, cornstarch, and 1/2 cup cold water. Set aside.

Use a spatula to create a small space in the center of the pan and add the reserved oil.
