Cucumber Bread Recipe

This whole wheat loaf is sturdy, but not too dense, perfect for a hearty sandwich.

INGREDIENTS

– Cucumber – Tomatoes – Water – Whole wheat flour – Active dry yeast

Puree cucumber and tomatoes with 1/2 cup water, and any dried herbs if desired.

Add flour, yeast, and salt, to the bowl of a stand mixer fitted with the dough hook attachment, and turn on briefly to mix.

Pour the cucumber mixture into the bowl, and run the mixer on Speed 2 until well incorporated.

Add more water, 1/4 cup at a time, if it looks dry. The mixture should be quite wet, kind of like a no-knead dough.
