Cut cold shortening into small pieces, no bigger than 1-inch.

Measure the flour, salt, and sugar into your stand mixer bowl. Add the cold cubes of shortening.

Start the mixer on low speed, then gradually increase the speed to medium high.

Now turn the mixer speed back down to low. With the mixer running, slowly drizzle in 3 tablespoons of water.
