Equipment

  • Large stockpot or Dutch oven (with a lid)

Ingredients

  • 2 tbsp chili oil
  • 1 small onion, sliced thin
  • 1 tbsp tomato paste
  • 3 cloves garlic, sliced thin
  • 3 cups water
  • 1 tsp sugar
  • ½ tsp ground black pepper
  • 1 tsp MSG
  • 1 tsp salt
  • 8 oz fried stinky tofu, sliced into bite-sized triangles
  • 4 oz leafy greens such as bok choy, yu choy, mustard greens
  • 1 corn on the cob, sliced into 2-inch disks (*optional)
  • 1 scallion, diced
  • ¼ cup cilantro, roughly torn
  • 1 tsp sesame oil

Instructions

  • Add 2 tbsp chili oil to a stockpot or Dutch oven on medium heat.
  • Sauté 1 small onion, sliced thin, 1 tbsp tomato paste, and 3 cloves garlic, sliced thin until aromatic, just a few minutes.
  • Add the 3 cups water, 1 tsp sugar, 1/2 tsp ground black pepper, 1 tsp MSG, and 1 tsp salt. Cover and bring to a boil.
  • Stir in 8 oz fried stinky tofu, sliced into bite-sized triangles.
  • Add 4 oz leafy greens such as bok choy, yu choy, mustard greens along with 1 corn on the cob, sliced into 2-inch disks. Simmer for 5 minutes.
  • Turn off the heat and keep covered for another 5 minutes. Top with 1 scallion, diced, 1/4 cup cilantro, roughly torn, and 1 tsp sesame oil just before serving.
