easy vegan recipe
cream vegan butter and powdered sugar
i used granulated sugar here 🥴 but you need to use powdered sugar for best results
beat in flour and vanilla extract on low speed until just combined
don't over-mix, or the cookies will become tough instead of tender
transfer 2/3 of the cookie dough onto a piece of plastic wrap, then flatten it into an even rectangular shape
mix colouring into remaining dough, then press it onto the first layer
i'm using green food colouring and peppermint extract here
roll up tightly into a log
use the plastic wrap to help you roll, but be careful not to roll the plastic into the cookie dough!
wrap and freeze until firm but not completely frozen
could take 1–4 hours depending on your freezer and the type of butter used
once ready to bake, unwrap and slice into 1/2-inch cookies
arrange cookies on a baking sheet lined with parchment paper and bake at 350 °F
keep them spaced 1-cookie width apart
cool fully before enjoying!
cookies will be soft and fragile fresh out of the oven, but will firm up as they cool
