This old-fashioned brownies recipe dates back to 1934, but it's definitely withstood the test of time. Mixed up all in one bowl and ready to eat within an hour!
Mix together 1 cup roughly-grated chocolate, 2 cup sugar, 1/2 cup melted vegan butter or margarine, 1 cup Homemade Vegan Yogurt, 1 tsp vanilla extract, and 1/4 tsp fine salt or 1/2 tsp kosher salt.
Gently fold 2 cups pastry flour, 2 tsp baking powder, and 1/2 cup chopped nuts into the wet mixture.
Spread the brownie batter 1/2-inch thick onto a lightly greased 8×8 baking pan.
Bake for 30–35 minutes at 350 °F (175 °C). Cut into squares or wedges while still warm.
Notes
Typically, I try to go for the bare minimum amount of sugar, but for this recipe, I found that the stated amount of sugar results in the best taste. Even reducing it by only 1/3 cup made the brownies taste a little off. If you absolutely must reduce the sugar, add some extra cocoa powder, otherwise, the resulting bake will taste doughy.
