Vegan Weeknight Recipes

My vegan recipes are specifically designed for busy weeknights. These are quick and easy meals that can either be made start to finish in under 45 minutes, or set-it-and-forget-it recipes that take less than 15 minutes of prep. (For even faster recipes, check out the Under 30 Minutes category.)

Some of my current weeknight favourites are: Thai Red Curry, Pesto Pasta, and Egg Roll in a Bowl.

Most of these recipes are for one or two people, but can be scaled up to feed a whole family. Plus, many of the recipes in this category are great for meal prep and can be enjoyed as leftovers for lunch the next day.
